These delicious cookies make use of any oranges you may have around in the house. They are light, fluffy and perfectly pair with the brightness from the fresh orange.

Cookie Instructions

  1. Preheat the oven to 350°F, and line your cookie sheets with a silicone baking mat or parchment paper.

  2. Place sugar into a small bowl. Zest an Orange into the sugar, then massage the zest into the sugar until incorporated. 

    Sugar (1 1/2 cup, 300g)
  1. Combine the flour, baking powder, baking soda, and salt in a medium bowl.

    Flour (4 cups, 480g); Baking Powder (2 tsp, 8g); Baking Soda (1 tsp, 6g); Salt (1/2 tsp, 3g)
  1. Using a stand or hand mixer, add butter and sugar together. Cream together on medium speed for 3 - 5 minutes, until fully incorporated and smooth. Scrape down the sides of the bowl with a silicone spatula.

    Butter (1 cup/2 sticks, 226g)
  1. Add the eggs and orange juice to the butter sugar mixture. Mix on low until incorporated, making sure to scrape down the sides of the bowl.

    2 eggs; Orange Juice (2 Tbsp, 20g)
  1. Add the flour and buttermilk to the wet ingredients, alternating between the two, starting and ending with dry. (1/3 dry, 1/2 buttermilk, 1/3 dry, 1/2 buttermilk, 1/3 dry)

    The dough will look very soft, almost more cake like then normal cookie dough consistency.
  1. Let the dough rest for 15 minutes.

  1. After resting, scoop 2 Tbsp (50g) balls of dough onto the cookie sheet, roughly 2 - 3 inches apart. 

  1. Bake cookies for 10 - 12 minutes, until fluffy, completely set and no longer shiny. Allow cookies to cool on the cookie sheet for 2 minutes before transferring them to a cooling rack. Allow to completely cool before the icing.

Orange Icing

  1. In a medium bowl, combine juice and zest of 2 oranges and the powdered sugar. Stir until combined. 

    If icing is too thin, add more powdered sugar a little bit at a time. If it is too think add a bit more orange juice.
  1. Use a spoon to place the icing onto the cooled cookies and spread around until the tops are mostly covered. 

  1. You may eat them immediately or allow the icing to harden before eating.
